Greek Grilled Chicken Sandwich

Grilled Boneless, Skinless Chicken Breasts

Every so often, we {DH} grills up several boneless, skinless chicken breasts. We like the PC Memories of Greece to do a quick marinade (at least 30 minutes) before putting it on the BBQ.  Usually we’re not a big fan of bottled or premade marinades, choosing to make our own, but this one is fantastic! Grill your breasts to an internal temperature of 165 deg F.

We then wrap the breasts individually and freeze them in a plastic bag. Ready when you need it, simply thaw and slice. It’s perfect for fast stir fry or sliced, this chicken makes for awesome sandwiches. Whether we’re heading to the beach, the zoo or on a road trip, this chicken sandwich is a staple in our picnic!

Yummy Chicken Bunwich Ingredients

  • Cheese Buns
  • Grilled Chicken Breast (as above) fresh or pulled from your freezer stash
  • Lettuce
  • Sliced Tomato
  • Sliced Onion
  • Sharp Cheddar
  • Mayo

Chicken Dinner

So since we were making the chicken to replenish our freezer stockpile, it made sense to just have it for dinner tonight too; saves on dishes and it was easy. Rice is easy and these brussel sprouts are quick and delicious!

    I looked at the marinade you mentioned above and thought that you might like the recipe linked to below. I simplify it by using bottled lemon juice and dried thyme (but oregano would be great). I just dump the ingredients into a Ziplock and then the chicken and let it sit overnight in the fridge. We live in FL, so I am not familiar with the brand that you mentioned, but it seems similiar to this–without the “added” ingredients.

    • Oh, I love Ina Garten. It’s funny, we make so much from scratch and I never even thought to look up a recipe for this bottled sauce! I’ll be sure to let you know how it turns out.
