{Almost} Foolproof Pancakes

My littles love pancakes for for some reason, when I am expecting, pancakes become a favorite. Maybe it’s because they are easy on the tummy or maybe it is just because I like real maple syrup. In any case, boxed mixes {have their place} but can never compete with homemade.

Ingredients:

  • 3 TBSP melted butter
  • 2 cups of flour
  • 1/4 cup sugar
  • 2 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 cups milk
  • 2 eggs

Directions:

  1. Melt butter in microwave or on the stove.
  2. Mix dry ingredients.
  3. Mix wet ingredients separately.
  4. Combine dry, wet and butter until just combined. Let rest while you heat your griddle.
  5. Lightly oil your pan and use a 1/4 cup measuring cup to dole out pancake batter.
  6. Cook pancakes over medium heat.

Notes:

I like to put my butter in the microwave, melt it then forget about it until next time I use the microwave. The pancakes do not turn out the same without the butter. As long as I remember to add the butter, this is a virtually foolproof recipe resulting in fluffy delicious pancakes every time.

You can mix the dry ingredients the night before to make morning go even smoother.

Pancakes refrigerate well and are easy to reheat for easy breakfasts throughout the week if you double or triple the recipe.

    I am totally incapable of making pancakes. Even from a box, I always manage to totally botch them. You’re inspiring me- I might just have to try homemade. 🙂

    These are pretty easy and even the times that I forgot to add the butter; they were still edible {and tasty!}.

    Same as Scary Mommy, I haven’t had luck with pancakes in the past but think it could be time to try again. Maybe it’s that I don’t have a griddle. I don’t know if a saute pan works as well.
