Butternut Squash Soup

I made the most delicious soup the other day, it was so good; a lovely roasted onion soup with a hint of sweetness. The butternut squash really added a beautiful texture.

  • two medium butternut squash, peeled and cut
  • two medium onions {next time I would just use one}
  • olive oil
  • tbsp real maple syrup
  • 3 cups chicken stock

I tossed the chopped onion and butternut squash in olive oil and maple syrup. Then I roasted the veggies for about an hour, or until a little bit caramelized and very, very tender. I pulsed the roasted veggies in the food processor, added in the stock and seasoned with salt and pepper as needed.

The result was an amazing. I ate every last drop of this soup. My only issue was that the onion was a little bit too strong; a very delicious soup but the roasted onion overpowered the squash flavor a little too much. Next time {and there will definitely be one!!} I will use only one onion.
